When I found this recipe it was labeled as Green-Pepper Steak, but we like it a lot better as a fajita base, so that's how we make it.
Fajitas

Prep the Meat
Ingredients
1 lb
Beef roast
1/4 C
Soy sauce
1/2 tsp
Garlic
1/2 tsp
Ginger
1/4 C
Oil
Instructions
With a sharp knife cut beef across grain into thin strips. Toss meat with soy sauce, garlic, and ginger. Heat oil in large frying pan or wok. Add meat, cook until browned. Taste meat. If it is not tender, cover and simmer 30-40 minutes over low heat.
Taking the time to simmer the meat is an important step for tenderness and for flavor.

Cook Veggies
Ingredients

Green onion, diced

Green pepper

Instructions
Turn up heat and add all vegetables except tomatoes. Toss until veggies are tender crisp, about 10 minutes.

Add Thickener
Ingredients
1 Tbsp
Corn Starch
1 C
Water
Instructions
Mix cornstarch and water and add to the pan. Cook until thickened.

Add Tomatoes

Instructions
Dice tomatoes and add them to the pan. Heat through.
I have substituted a can of diced tomatoes and it has been good as well. The reason for adding the tomatoes after the thickening process is to avoid overcooking the tomatoes so they keep some shape.
Serve on tortillas with sour cream, cheese, rice, beans, and whatever else you enjoy on your fajitas.
